1. Millet Blinis with Tomato and Onion “Caviar”

2. Mix-Veg Poriyal

Divya, from Chef Divya made this colourful, heathy, mixed vegetable recipe that would make a great side dish that is crunchy and filling. Click here for the recipe. And do check out the rest of her blog too!

3. Amla ki Sabzi (Indian Gooseberry)

Here’s another one from Chef Divya. It’s a simple curry made with Amla (Indian gooseberries), which has traditionally been considered beneficial for diabetics (especially, Type 2). Amlas have quite a strong sour taste so may take some getting used to but once you get to know them, they really are quite yum! 🙂 Click here for the recipe.

4. Beetroot Side Dish

Sofia, from Papaya Pieces, shared this fresh, colourful side dish made from beetroots and shallots. Click here for the recipe and Sofia’s explanation of the structure of sugars versus good carbs. While beetroots do have natural sugars, they are also packed with nutrients and so can be enjoyed even by diabetics a side dish or a snack!

5. “Could be Quinoa” Salad!

6. Mung Bean Flatties

Another recipe from Sonal of SimplyVegetarian777, these mung bean flatties are her healthy, pan-fried take on the traditionally deep fried, refined flour, bread pakoras! Indulge, but in small quantities! Find the recipe here.

7. Mung Bean Paneer Soup

Namrata, from My Food Tapestry, made a lovely, wholesome soup with mung beans and a little paneer (you could also use tofu). This would make a nutritious snack or a complete meal when served with some grilled veggies and garlic bread (see her recipes for these below). Click here to see the soup recipe. 8. Grilled Vegetables and Garlic Bread

Namrata, from My Food Tapestry, also made some grilled veggies marinated in a herbed, garlic, chilli oil, and served these along with some whole wheat garlic bread and her mung bean soup. Grilled or roasted veggies are an easy way to fill up on the nutritious, but low GI vegetables and along with a bean or lentil soup you’ve got a delicious meal.
