Try it ! Celeste’s Greeny Mac’n Beany
In an effort to learn by doing and help test out recipes by fellow bloggers, I’m starting a series called “Try it !”.
Whenever I find a healthy, diabetic-friendly recipe for which I can procure the ingredients, I’ll try it out and share the results with you! Of course, I’ll link back to the original post so you can check out the recipe as described by the original blogger.

My notes for this recipe:
- I left out the cashews (limiting calories to be diabetic-friendly)
- I used mustard seeds instead of dijon mustard
- I used a bit of coriander powder instead of nutritional yeast
- I used up half the sauce for pasta for 2, then added the remainder of the sauce to stir fried tofu and capsicum to make a side dish for our dinner rotis!
